Weekend Events/Asian Dinner

This weekend was fun. On Saturday night Eric and I and Tim and Katie and Joyanna went out to dinner at a pizza restaurant. After dinner we went to see the Festival of lights in Hartford. It was nice to get out and walk around and take pictures. The weather was not too cold either. Later we played Monopoly and just sat around and talked. It was great. Sunday was a day of laundry and organizing the cabinents. Not fun!

Tonight Eric and I made Spring rolls they were so good I have to say. At first I didnt have the the nack of rolling the spring rolls but thanks to Eric he was able to figure it out.

Recipe for Philippino Egg Rolls

Spring Roll medium Size wrappers

Filling
1/2 pound of Ground Beef
1/2 pound of Ground Pork
2 Cups of raisins
1 cup of carrots
1 medium onion
2 eggs
Dash of salt and pepper
2 T of Soy sauce

Brown meats and drain extra liquid. Take off from burner and add raisins, carrots, onions, and eggs.salt, and pepper and soy sauce. Mix well together. Fill Wrappers and roll. Fry in vegetable oil or corn oil. Yummy! Dip in Sweet Chili Sauce just for Spring rolls.
